It’s official. With Memorial Day weekend right around the corner, it is finally barbeque season. For those of us on perpetual diets (or just health-conscious), Memorial Day weekend can be the start of a downward spiral. We break out our fatty, sauce-drenched meats, mayo-based sides and greasy chips in the name of summer. Those of us on a plant-based diet can be just as guilty. Soaking jack fruit in a vegan-friendly sauce and slapping it on a burger bun might have less saturated fat than pulled pork, but it definitely isn’t low in carbs. 🙂 Even junk food classics like Frito’s and Oreo’s make the “accidentally vegan” list.

If you are looking for some last minute healthy recipes for a potluck or a barbeque this weekend, look no further. These 10 healthy Memorial Day recipes are all under 350 calories per serving. I’ve included entrees, side dishes and hearty appetizers. No boring salads or veggie trays here!
